15 Minute Summer Salad Recipe

Looking for something quick and easy to make that doesn’t require turning on your oven? This 15 Minute Summer Salad Recipe is just the ticket! Although the warm weather may feel like it’s coming to an end, here in San Diego it’s almost always summer. Growing up in Washington state I would always associate September with cool crisp air, beautiful falling leaves and of course lots of rain. But since I’ve moved to San Diego over 5 years ago I discovered that Fall doesn’t really exist here.

As I write this, the weather app on my phone says it will be 84 degrees today. I can’t complain though, we pretty much have ideal weather year round. However, that means many days it’s just too damn hot to think about turning on my oven or stove.

15 Minute Summer Salad Recipe

Enter, this lovely summer salad recipe, which I top with a fresh basil vinaigrette dressing that I discovered from one of my favorite food bloggers, What’s Gaby Cooking. So, if you just can’t handle the heat in the kitchen this recipe is the answer to your problems.

*Serves 2*

Salad Ingredients:

1 Package of Trader Joe’s Butter Lettuce

4 Large Heirloom Tomatoes ( I use a red, yellow and green variety)

½ Pint Heirloom Cherry Tomatoes

½ Cup Mozzarella Cheese

½ Stick Italian Dried Salami or Dried Sausage of Your Choice

2 Rosemary Dinner Rolls (Torn Up For ‘Croutons’)

Salt & Pepper To Taste

Basil Vinaigrette Ingredients:

1 Shallot (Chopped)

1 Clove Garlic

2 Cups Fresh Basil Leaves (Tightly Packed, Stems Removed)

½ Teaspoon Red Pepper Flakes

½ Cup Olive Oil

2 Tbs. Red Wine Vinegar

1 Teaspoon Sea Salt

Directions:

First, I start by making the Basil Vinaigrette so that it can sit and marinate in all the flavors while I arrange the rest of the salad. You will want to mix all of the ingredients in a food processor or blender. I use my Magic Bullet! Blend until smooth. If you end up with leftovers you can store in an airtight container in the fridge for up to 3 days.

Next, you’ll want to start by dicing all the tomatoes, meat, cheese and dinner rolls. Toss them in a large bowl with the butter lettuce. Season with the salt and pepper. Finish it up by drizzling with the Basil Vinaigrette.
